Delicate and lightly fruity taste, harmonious with pleasant notes of sweet almond, artichoke and lettuce leaf. Bitterness and spiciness are in perfect balance: a very slight bitter note and a hint of spiciness are perceptible, harmonizing well with the overall predominantly sweet taste and olfactory sensations.

Origin: Exclusively produced from the family olive groves located in the Agro of Gagliano del Capo and Alessano, in the Lower Salento, in the province of Lecce, during the months of October/November.

Processing: The olives are crushed in the company’s olive mill, with cold extraction, on the same day as the harvest, to preserve all the freshness of the fruits and retain the polyphenols, antioxidants naturally present in high-quality extra virgin olive oils.

Color: Golden yellow with leaf green nuances, clear.

Pairings: Ideal for dressing simple warm bread, tasty bruschettas, vegetable pinzimonios, raw fish, fresh cheeses like mozzarella and ricotta, fish soups, grilled white meats, salmon carpaccio, vegetable-based first courses, for a light sauté or frying, as a substitute for butter in the preparation of donuts, tarts and plumcakes.

 

Commitment to quality: Certified Organic supply chain by Ecogruppo Italia, Control Body authorized by MIPAAF IT BIO 008.

 

Shelf life: 18 months from the packaging date. The shipped product always corresponds to the most recent olive harvest, within 12 months from the harvest.

Storage: It is recommended to store at a temperature between 12° and 18°C, in a cool and dry place, away from sources of light and heat.
